Ingredients
- 1 head cauliflower
- 4 cups / 120g chopped spinach
- 4 tbsp / 60g butter
- 2 tbsp / 1 oz / 25g cream cheese
- 2 tbsp double cream / greek yoghurt
- 1/4 tsp black pepper
- garlic / herbs to taste
Variations:
Add grated cheddar or parmesan cheese on top before serving, grill if you want it to turn golden brown.
Add fried onion and garlic to the mix just before serving.
Instructions
Step 1
Chop cauliflower into chunks, as uniform as possible.
Step 2
Steam cauliflower above a pan of boiling water until tender (about 5 minutes).
Step 3
Squeeze out any excess water using a clean kitchen towel or cheesecloth. Don’t be afraid of removing too much liquid – you can always add a little extra water or chicken broth if it seems too dry later on.
Step 4
Return the cauliflower to the pot and add in the butter, cream cheese, heavy cream, salt and pepper. Using a potato masher if you prefer a lumpier texture, or a hand mixer for a smoother texture. mix everything until it’s all well integrated. (If your cauliflower is too cool to melt the butter and cream cheese, place it over low heat, stirring constantly until everything has melted.)
Step 5
Taste your mashed cauliflower and add more salt or pepper and herbs if desired.
